Peach Salad

Ingredients
    1 roll Ritz crackers, crushed 1/2 cup margarine, melted 1 cup sugar, plus 2 tablespoons 1 8-ounce package cream cheese 1 carton Cool Whip 2 packages peach Jell-O 2 cups hot water 1 20-ounce can peaches, drain and save juice

Directions
    Mix margarine, cracker crumbs and 2 tablespoons sugar. Press into 9-by-13 pan. Bake at 350 degrees for 10 minutes. Mix cream cheese and 1 cup sugar until smooth. Fold in Cool Whip. Spread on cooled crust. Use peach juice with hot water to make 2 cups. Add Jell-O and dissolve. Cool Jell-O and let it thicken some. Add peaches and pour over cream cheese. Refrigerate to set.
