Peach Upside Down French Toast

Ingredients
    1/2 cup butter
    1 1/4 cup brown sugar
    1 tablespoon water
    2 to 3 peaches, peeled and sliced (or 1 29-ounce can drained sliced peaches)
    1 loaf French bread (15 inches), sliced into 1-inch slices
    6 eggs, beaten
    1 1/2 cup milk
    1 tablespoon vanilla

Directions
    Melt butter in sauce pan. Stir in brown sugar and water. Cook, stirring constantly until thickened. Pour into a well-greased 9x13 pan. Cool. Place peaches on top of sugar mixture. Place bread slices on top of peaches, filling all gaps. Mix eggs, milk and vanilla and pour over the top of bread. Cover and refrigerate overnight. Bake at 350 degrees for 40 minutes or until set. Cool 5 minutes. Coat cookie sheet with non-stick spray and invert.
